Eat me: Asparagus salad with tomato vinaigrette

We love asparagus!

Tomato vinaigrette

1 lbs tomato

2 tbsp olive oil

3 c canola oil

1 c red wine vinegar

2 tbsp grainy mustard

3 tbsp honey

Salt and pepper to taste

Combine all of the ingredients in the blender (except the oil) and puree.

With the blender running, slowly add the oil to emulsify. Season to taste.


1 lbs asparagus, cut and blanched

2 c mixed greens

1 c red onions, sliced

3 green onions, sliced

1 c cooked mushrooms (assorted)

1 egg, poached

Any other vegetables that you like!
